Default Rust Removal / Paint Preservation?

I'm in the middle of a winter project - restoring a '58 Sears Allstate motorcycle. The plan is to do a full mechanical restoration, while preserving what original paint is left and getting rid of the rust. I'm going for the now-popular "patina" look. I've been using Evapo-Rust with great success; it'll make the rust disappear without seemingly harming the paint at all. Great stuff. However, this method is very pricey, with Evapo-Rust running anywhere from $14-$25 a gallon. And it tends to run out of breath fairly quickly. So my question is: will vinegar work to suit my purposes just as well (but I know - a lot more slowly). I've used vinegar on rusty bolts and such, with success. Just wondering if it'll eat the rust but NOT the paint - at about 1/10th the price? Thanks.
