Mike G .... VFD that sounds like about the best idea yet... technically.
It has the ability to make 3 phase. They should be able to size it up for larger hp sizes.

Now price......they might not be that cheap, call arround. Maybe used ?? Then again maybe a used single phase motor.

Another thought ..... if you have a motor protector on it now , it may not like the VFD input. I assume there are mechancial and electrical versions of protectors. I suspect the electrical versions won't like the VFD input. A VFD varies voltage and frequency. And they output square wave like voltage instead of sinewaves.

I think motor protectors are setup so they can mimmick temp rise in the motor windings and shut off the motor before it gets too hot.

I agree that a VFD could be over kill for an air compressor that will run at 60 Hz anyway. The VFD would offer added speed control for something like a machine tool.

With a VFD, an overload relay is not required. The drive will be configured with information about the motor it is operating, and therefore can provide much better protection than a simple thermal overload relay. You still need to have over-current protection for the wiring, a disconnect (before VFD) and preferably a way to lock out the disconnect.

Keep in mind that single phase motor of the same horsepower rating is most likely going to be physically larger.
